When Ken & Kitty set out to open a restaurant, they had a good location, GREAT recipes and NO IDEA a Pandemic was coming.

Construction was nearly completed when the Pandemic hit. Money had been spent, contracts signed. Two kitchens were built out and two dining rooms were nearly done. When things were allowed to reopen, Ken & Kitty were about to finish construction and then some real challenges began to emerge.
Complying with Covid restrictions and convincing people to try a new place is a double-whammy.

The Challenges
Two Audiences, Two Standards – Winning over both a traditional fine dining crowd and the Kosher community—while earning repeat visits—requires precision, consistency, and a deep understanding of both markets.
A Complex Concept – A 4,200 sq. ft. upscale restaurant and wine bar attached to a quick-service Kosher operation offering similar dishes (but prepared differently) naturally creates some customer confusion.
Heavy Competition – Boca Park is a saturated dining destination.
A Demanding Market – Summerlin diners go out often, but have more options than almost anywhere else in town.
Where We Came In
Like many restaurant owners, the Chinglish family had their hands full with day-to-day operations.
